Vegan coconut curry

I’m not a vegan. I don’t eat meat, but I do still eat cheese and eggs. But I do try to cook vegan as much as I can. I’ve tried a lot of those recipes, some worked out better than others. Coconut curry was one of those things I’ve seen passing by a lot, but I’ve always been quite sceptic about it. I don’t like sweet things in my food, no, I’d rather have something savory. But when I saw another recipe for the 25th time, I thought I should try it at least once.

Let me tell you one thing, before I jump in: I’m a picky eater, definitely when it comes to vegetables. Everything has to be cut into really small pieces, and even then… #foreverakid. It doesn’t matter if I’m hungry or not, if I don’t like it, I won’t eat it. I must say, I was quite curious about this one…

The recipe:


  • 2-3 cloves of garlic
  • Half an onion
  • Bok choy (about 1/2 of it)
  • 1 red pepper
  • 2 potatoes 
  • 2 carrots
  • Paprika (1ts)
  • Curry powder (2ts)
  • Cumin (1ts)
  • Salt
  • Pepper
  • Tomato sauce (about 250 ml)
  • Coconut milk (1 can)
  • Rice
  • Sugar 
  • Tahin

I started of with cutting all the vegetables. I choose to cut everything into really small pieces.


Then I cooked the carrots and potatoes. Because I had cut them into small chunks, I only had to let them cook for about ten minutes.


While the other veg were cooking, I let the onion and the garlic stew for a few minutes until they were nice and a bit ‘glassy’.


When this was done, I added the pepper and the bok choy. I put on the lid and let everything cook.


In between I added all the spices. Afterwards I added a bit more curry, because I thought that a curry should actually taste like curry… No? When the potatoes and carrots were done, I removed them form the stove, drained them and then let put them aside for a while.


When the vegetables were done, I added the coconut milk, the tomato sauce, some tahin and a bit of sugar. I also added the carrots and the potatoes. I let this simmer for 20 minutes.


Meanwhile the rice was cooking. After ten minutes that was done , and I added the rice to the sauce. Time for a taste test!



I already told you how difficult I am when it comes to food. Well, I can honestly tell you that I haven’t eaten something this tasty in a long time! We ate all of it. (I even have proof!)


I like the taste of curry, so that wasn’t a problem. I was a bit scared of the coconut milk in it, but it didn’t taste like coconut at all! There was a fresh taste in the dish, the coconut definitely didn’t dominate the dish. I already look forward to making this dish again.
